Whey Protein Isolate, Tween 20 and Casein Hydrolysate Stabilized O/W Nano-Vesicular Emulsion Systems with Curcumin Cargo

Stable oil-in-water nanoemulsions were generated by ultra-high-pressure homogenization (UHPH) at 140 and 210 MPa for use as nano-vesicular vehicles (NVV) to carry hydrophobic generally recognized safe (GRAS) curcumin (CU) whey protein isolate (WPI) in aqueous nutraceutical systems. Curcumin was used its antioxidant activity participation the Michael reaction with nucleophiles pHs above 8.0. Two variables, (1) addition of casein hydrolysate (CH) (2%, w/w WPI) and, (2) UHPH (140 MPa), studied their effect on stabilization monodispersed NVV capacity CU cargo throughout storage. CH Tween 20 both added increase dispersibility stability NVV. Addition reduced nano-particle size (dvs) 17% when compared to140 (P<0.05), increased pressure reflected a 63% smaller dvs (P<0.05). The nanoparticle distribution not changed CU, dvs’s 101 93 nm 73 92 CU-NVV, respectively. system stable 28 days observed zeta-potential, contact angle, surface energy, can be deliver maintain activity.
